Your original horse, Pebbles, can be retrieved. Visit the horse trader in Semine (south). However, securing Pebbles requires either a Groschen payment, persuasion, or intimidation. During my playthrough, assisting Radovan the blacksmith and adopting a more noble appearance enabled me to persuade the trader to relinquish Pebbles without payment, although it slightly impacted my reputation in Semine. If persuasion fails, prepare to pay.
Stealing a Horse
Alternatively, horse theft is an option. Wild horses are rare. Farms and stables offer better prospects, but theft carries the risk of apprehension.

I suggest targeting the farmhouse near Vidlak Pond (west). The fishermen there possess two horses. Simply mount one and ride away.
Subsequently, visit the Nomads' Camp (east of Vidlak Pond) and engage the horse trainer to learn saddling and taming (for a fee). Riding without taming is also possible.
